BOSBURY diary farmers John and Erin Barron (pictured) are to diversify by opening a luxury ice cream parlour in Ledbury.
As most diary milk farmers struggle to make a living with rock-bottom milk prices, the Barrons hope that Beaconhill Ice Cream, made of cream and milk from their own pedigree Jersey herd on Beaconhill Farm, will tickle the taste buds of the public.
Mrs Barron said: "It's the only way to survive. We're marketing a premium, high quality product, and we are bringing something in to Ledbury that people don't have. I think it's going to be big."
The couple have already done the rounds of Farmers' Markets within a 50-mile radius and have found that they can sell up to 100 cones and tubs in just three hours.
The parlour, in the former Insignia clothes shop, in The Homend, will also serve coffee and tea.
