A jury at Hereford Crown Court was shown CCTV footage of Daniel Galvin Jnr wrestling with officers as they tried to put him in a cell following his arrest on suspicion of assaulting a neighbour.
The 35-year-old defendant, who had been drinking, was pinned to the floor before being restrained by the legs and lifted into a cell.
Galvin, who launched a hair care product range with the Prince of Wales last year, was taken to a police station accused of repeatedly punching and kicking his neighbour, 61-year-old James Hicken, who he had found trying to help an injured bird in his garden last year.
The attack, on August 29, allegedly happened after Galvin had spent the day clay pigeon shooting with a group of friends in a field behind his rural retreat in Pensham, near Pershore.
Giving evidence, Mr Hicken described how he had climbed a 6ft fence, dividing their land, to rescue the trapped herring gull which he believed had been shot.
It was as he went to return to his property, Mr Hicken said he heard laughter from Pensham Fields House, where Galvin lives.
Mr Hicken said he threw the dead bird to Galvin's feet when Galvin punched him to the floor before "frog-marching" him back to the fence where he punched him again and kicked him in the kidneys.
Galvin was later charged with obstructing a police officer, assaulting a police officer and causing criminal damage to a radio earpiece.
The defendant told the interviewing officer Mr Hicken had poked him in the face and that he had "reacted spontaneously" in self-defence. The defendant denies one count of assault occasioning actual bodily harm.
The case continues.
