A NEW takeaway venue in the city centre will celebrate the humble spud.

The Spud Lab on The Tything, Worcester is opening tomorrow (Thursday) with a takeaway menu that brings the traditional potato to the fore.

The Spud Lab's owner, Will Bradley, said: "The initial inspiration behind it came from my sister, Vanessa, who has always wanted to open a shop like this.

"In fact, she wanted her own potato van when she was younger.

"She's heavily pregnant at the moment but she wants to come and work in here part-time one day."

Mr Bradley already co-manages The Alma Tavern pub on Droitwich Road, Worcester, and has been working on The Spud Lab since earlier this year.

Mr Bradley added: "We took the lease around February or March this year, and a lot of work has been done to get to this point.

"We have been cooking some of our dishes today (Wednesday) to prepare ahead of opening.

"I have looked at what dishes work at the pub and combined that with plenty of research on what potato dishes are popular not just in this country, but also what's on-trend in the US and Australia."

The Spud Lab has limited dining space inside so takeaways will be the focus.

Mr Bradley said: "Naturally, the concept we have leans toward takeaway and I see it as a grab and go for people in the city.

"We are looking at using some takeaway delivery apps in future too."

Loaded jacket potatoes, breakfast baps using potato buns, and loaded tater tots are The Spud Lab's typical fare while daily specials will be introduced.

Mr Bradley said: "We will vary the menu seasonally with lighter toppings in the warmer months, so you always get the essence of a spud.

"The potato is a traditional British dish and it's healthy in its own right, but I have been working with a couple of fitness instructors to create a high protein menu for the future."

The Spud Lab will open from 9am until 5pm on weekdays, 9am until 6pm on Saturdays and from 10am until 3pm on Sundays.
