Fresh, clear and healthy

550g fresh strawberries washed then hulled
95g brown sugar
3 tsp fresh ground black pepper
300 ml waterJuice and grated zest of 1 lemon
50g fresh garden mint - chopped
2 tblsp Fresh Orange Juice.

Method

1 Place the sugar and water into a pan and heat, stirring continuously until the sugar is dissolved

2 Bring the liquid to the simmer and add the lemon juice, zest and the ground pepper

3 Remove from the heat, then add the orange juice and set aside

4 Meanwhile, cut the strawberries in half, or if too large, cut into quarters, place in the bowl and pour over the pepper syrup...

5 Add the mint and stir gently

Place into bowls or presentation glasses and servewith a sprig of mint
